Great Healthy Chili for these cool evenings while were waiting on Spring

I found this great recipe for Southwest White Chicken Chili.... All I can say is Mm Mm Good....LOL

Ingredients
1 tablespoon vegetable oil
4 skinless, boneless chicken breast halves (about 1 pound), cut into cubes
4 teaspoons chili powder
2 teaspoons ground cumin
1 large onion, chopped (about 1 cup)
1 medium green pepper, chopped (about 3/4 cup)
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
3/4 cup water
1 1/2 cups frozen whole kernel corn
2 cans (about 15 ounces each) white kidney beans (cannellini), rinsed and drained
2 tablespoons shredded Cheddar cheese

Directions
Heat the oil in a 4-quart saucepan over medium-high heat. Add the chicken, chili powder, cumin, onion and pepper and cook until the chicken is cooked through and the vegetables are tender, stirring often.
Stir the soup, water, corn and beans in the saucepan and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes, stirring occasionally. Sprinkle with the cheese. Yield: 6 servings (about 1 1/4 cups each).

Hi Ladies

Hi ladies,

First I want to say thank you for your patience. I haven't posted this week because a close friend and father of my nieces and nephew was found deceased in his bed last Saturday at the young age of 26. Most of you already know this (thank you for your prayers and support) but some of my followers may not so wanted to explain why I haven't been here.

My plan is to start fresh Monday morning. This week was kind of out the window because I'll admit I'm an emotional eater so this week my diet/life style change were the farthest thing from mind.

I have to get back on track because seeing that young man laying there yesterday at the funeral was just a reminder that tomorrow isn't promised to any of us and if you abuse your body and don't take care of it, it will give out on you. I don't want to do that to my children, my family or my friends. I'm going to do what ever it takes to take care of me and get healthy. Because I feel blessed to have the life Ive been given!

Things to follow this week...

I'm finally getting a scale and will post my weight and pics
Going to share more recipes
Going to share my menu and exercise plan....

Thank you again for all your support...

Until then......

Bad Day.....

Well ladies I'm sorry to make a negative post and I'll try to do that as little as possible but I'm trying to be honest and stay as real as possible.

Today was a bad day for me. I will spare you the details of the long, bad day I've had..... but my reason for posting about me having a bad days is because I'm an emotional eater especially when I'm upset. And today I was upset stressed to the tilt and ate things I should have eaten! I didn't go all crazy or anything.... I ate a couple pieces of chocolate, a handful of gold fish crackers and a slice of pizza but still all things I wouldn't have chosen had I not been so upset. I need to find something other than food to turn to when I'm upset!

Where do you turn when your upset and had a bad or stressful day?

I'll be back to post again later after I get the kids to bed!

Until then......

Thank you to the Ladies that are Following me so far...

I think this is going to help me so much and I hope that it helps others as well....

As of now I dont have a scale... Was actually afraid to get one. Because I'm afraid of focusing too much on the number and how quickly its going down rather than the task at hand. But I've decided its important so I am going to go out and purchase one tomorrow. After I get it home I'm going to post my weight (pic of the scale just to hold myself 100% accountable for my actions everyday) and a pic of me. Because even though I've been at this a couple weeks I havent given 100%. I dont know what changed but after 2 weeks my mind hadnt been as clear or set on doing whatever it takes to get where I want to be until yesterday! I just woke up and felt different I dont know how to explain it!

I think a positive way to say motivated it is to reward yourself with things other than food.

So something I have decided to do to not only to reward myself but my followers too for every 15lbs I loose Im going to treat myself to a trip to Bath and Body Works (one of my favorite places in the whole world...LOL)And Im going to giveaway a $15 E-Gift Card to Bath and Body Works to a Follower....

Im going to sit down over the next few days and write down my goals and the things I think that are going to help me get there....

I know Im kinda all over the place tonight sorry about that. Just so much I want to get started on. Hopefully the other post to follow will be more on a just a subject or two rather than a bunch of this and that ;o)

I really wanted to share a link to a PDF file from the US Dept of Health and Human Services about weight loss. It's 44pages but full of lots of great information

http://www.nhlbi.nih.gov/health/public/heart/obesity/aim_hwt.pdf

Well hope to post some recipes and other tools tomorrow.

Until then...
